Banana in Coconut Cream Camping Dessert Recipe

Banana in a sweet coconut cream in 10 minutes! Quick, easy and tasty, this Thai dessert has to be tried, so why not make it while you’re camping?

So easy to pack, it only has 4 ingredients, making this a practical as well as delicious recipe to prepare over a campfire. A can of coconut milk, some bananas, sugar, and salt and before you know it, you have dessert done!

In a land where bananas grow all year round you would expect Thailand to have a multitude of recipes using bananas; sweet and savory they are experts at taking the humble banana, which is so often just eaten out of the skin in the West, to higher levels that combine flavors that work so well together.

The recipe below is true to the traditional recipe which is known as  Kluai Buat Chi in Thai, literally translated as ¨Banana dressed like nuns’. This is  because Thai Buddhist nuns dress in white and this all-white dessert is said to reflect how they look.

If you want a healthier and just as tasty dessert, try substituting the sugar for honey. Additional flavorings of a cinnamon stick can also add a different taste sensation. Banana is a great fruit to use in a fruit combo like banana and fig or banana and mango. The additional fruit can be added a couple of minutes before the end of cooking and the finished dessert sprinkled with toasted almonds or coconut. They are not traditional methods but still delicious.

For a complete alternative to this traditional recipe, the banana can be substituted with pumpkin. Just peel and cut the pumpkin into the shape of thin fries and soak in water with a little lime juice to prevent them discoloring. The pumpkin is cooked in the coconut until softened (for about 8-10 minutes) and then the sugar and salt added until it is dissolved. A tasty alternative to the sugar is maple syrup. It makes a sweet, luscious dessert.

However you cook it, this Thai dessert is a great palette cleanser and is particularly ideal after a spicy, hot Thai meal.

Ingredients

  • 14 fl. oz can coconut milk
  • 2 oz sugar or 4 tbsp honey
  • ¼ tsp sea salt
  • 5 firm, just-ripe bananas

Instructions

  1. Heat up the coconut milk and sugar (or honey).
  2. Cook for about 3- 4 minutes.
  3. Slice the bananas and add to the coconut milk along with the salt.
  4. Cook on a low heat for about 5 minutes or until the bananas are soft.
  5. Serve hot or cold.
